  • 2 tsp baking powder
  • 1/2 tspn baking soda
  • 1/2 tspn salt
  • 1/2 cup milk
  • 1/2 cup veg oil
  • 1 tspn vanilla extract
  • 1 stick unsalted butter, softened
  • 1 cup sugar
  • 3 lg eggs

Step 1

350 oven
line 18 muffin cups with liners
whisk together the flour, baking powder, baking soda and salt in a med. bowl. combine the milk, oil, and vanilla extract in a 2-cup measuring cup or a small bowl.

In mixer, beat the butter and sugar until light and fluffy about 3 mins.

Add the eggs one at a time, beating well after each addition. reduce the speed to low and add the flour mix alternately with the milk mix in batches, beginning and ending with the flour mix and beating just until blended.
fil the liners almost full with ice cream scoop. Bake until golden and a toothpick inserted is clean about 20 mins. Cool
