Caribbean Fudge Pie

Ingredients
- 1/4 cup butter or margarine
- 3/4 cup brown sugar firmly packed
- 3 eggs
- 12 ounces semisweet chocolate chips melted
- 2 teaspoons instant coffee powder
- 1 teaspoon rum extract
- 1/4 cup flour
- 1 1/2 cups chopped pecans divided
- 1 unbaked 9 inch pie crust
- whipped cream (optional)

Preparation
Step 1
Cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Add melted chocolate, coffee powder, and rum extract. Stir in flour and 1 cup of the pecans. Pour into pastry shell, and sprinkle with remaining pecans. Bake in pre-heated 375 degree oven for 25 minutes or until done. Cool, and serve, with whipped cream, if desired.
