Ingredients

  • 4 pork chops, 3/4" thick
  • 2/3 cup regular rice, uncooked
  • 3 cups V8 juice
  • 1/2 tablespoon Tabasco sauce
  • 1 teaspoon salt
  • 4 large onion slices
  • 4 tablespoons brown sugar
  • 4 tablespoons catsup

Step 1

Trim excess fat from chops. Lightly grease a heavy skillet with margarine. Brown chops slowly on both sides. Remove chops and pour off all the excess fat. Stir in rice, tomato juice, Tabasco sauce, and mix well. Arrange chops on top and sprinkle with salt. Place onion slice, tablespoon of brown sugar, and tablespoon of catsup on each chop. Cover tightly and simmer slowly over low heat for 40 minutes.
