Meat Loaf - grind the meat yourself

I have made Meat Loaf many different ways and now it is time to grind it yourself. I control the meat and the fat content. Much better for you.

Ingredients
- Meat:
- 3 3 3 # of Turkey breast - get one with the bones in - cut them off and save for soup later.
- 3 3 3 # of Beef Pot Roast
- 3 3 3 # of Pork Butt
- 6 6 6 slices of bacon
- 1 to 2 off the bone and cut the meat into 1 to 2 inch pieces

Step 1
Still in the course grind - add 1 med. size white onion and 4 cloves of garlic. Grind it into the meat mix.
Add to the meat mix: 1 tsp of each.
Salt & pepper
Garlic Salt
Smoked Paprika
any other herbs you like.
Mix all into the meat mix very well. Set up the grinder to fine grind. Now grind the meat mix again, this make it all mix together well and the meat is much better ground very fine.
Now we are ready to make it into meat loaf..
3 eggs
1/2 cup beef broth
1/2 cup ketchup
1/2 cup tomato sauce or I like V8 juice. ( veggies in it)
2 to 3 cups bread crumbs
(Sometimes I use quick cook oatmeal)
Mix this into the meat very well and set oven for 375 degrees.
With 2 glass loaf pans - divide in to each one, 1/2 the mixture.
( If you like the meat loaf to have a little hot pepper taste, save half in the bowl and add a small can of diced green peppers. This is not very spicy tasting - but if you want to add 2 cans and it will be a little spicy. )
Bake for 1 hour or until the temperature is over 180 degree. (Turkey must be over 180)
eat one and freeze one -
