SQUASH PATTIES

Ingredients

  • 2 cups grated uncooked yellow squash
  • 2 teaspoons sugar
  • 1/4 cup plus 2 tablespoons all-purpose flour
  • 2 teaspoons salt
  • 2 eggs, beaten
  • 2 teaspoons grated onion
  • 1/8 teaspoon pepper
  • 2 tablespoons butter

Preparation

Step 1

Combine squash, onion, salt, pepper and sugar in medium bowl. Cover and let stand 30 minutes. Drain thoroughly. Add flour and eggs, stir well. Melt butter in a large skillet over medium heat. Drop squash mixture by tablespoons into hot butter; cook until golden brown, turning once.
