Ingredients

  • 3 egg yolks
  • 1 11 oz can sweetened condensed milk
  • 1/2 cup lime juice
  • 3 drops green food coloring
  • 1 baked 9" pie shell
  • TWO STEP MERINGUE
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 3 egg whites, room termperature
  • dash salt
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla
  • 6 tablespoons sugar

Step 1

BAKED PIE OR TART SHELLS: Poke all over with fork before baking in 400F oven for 10 - 15 minutes until lightly browned.

FILLING: Beat egg yolks until smooth. Add condensed milk, lime juice and green food coloring. Beat. Pour into pie shell.

TWO STEP MERINGUE: In small saucepan mix water and cornstarch. Heat and stir until it boils and thickens. Cool thoroughly.

Beat egg whites, salt and cream of tartar until a stiff froth. Add sugar gradually, beating until stiff and sugar is dissolved. Add vanilla and cornstarch mixture. Beat until mixed and stiff. Spread over pie sealing to edges. If not sealed very well, meringue will shrink when cool. Bake in 350F oven about 10 minutes until golden.

Cool for about 1 hour then chill at least 3 hours.
