CAKE - Banana Bread Churro Bites

Ingredients
- dipping sauce:
- 1/2 recipe chocolate chip, coconut banana bread, cut into 1 in slices
- 1 cup granulated sugar
- 1 tablespoon cinnamon
- 2 scoops vanilla ice cream
- 2-3 shots hot espresso
- vegetable oil for frying

Preparation
Step 1
1. Preheat oil to 375°F.
2. Cut each piece of bread into 9 equal cubes (about 1 inch thick). Set aside.
3. Pour sugar and cinnamon into a shallow baking dish and mix together. Set aside.
4. Once the oil is hot fry the bites, in batches, for about 3 to 4 minutes. Place directly into the cinnamon-sugar and toss together. Transfer onto a cooling rack and allow to sit for about 7 to 10 minutes.
5. When ready to serve scoop ice cream into a small bowl and top with espresso. Serve.
