Roasted Red Cabbage with Caraway Butter

- ½ medium head red cabbage, cut into 6 wedges
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 2 ½ tablespoons unsalted butter, softened
- ½ teaspoon grated lemon zest
- ¼ teaspoon toasted caraway seeds

Preparation
Step 1
Preheat oven to 425°F. Line a baking sheet with foil and coat with cooking spray. Place cabbage in a single layer on the prepared pan. Sprinkle with salt and pepper. Roast, turning once, until tender and browned on both sides, 35 to 40 minutes. Meanwhile, combine butter, lemon zest and caraway seeds in a small bowl. Serve the cabbage topped with the butter.
