Ingredients

  • 2 tbsp. margarine
  • 2 tbsp. flour
  • 3 medium potatoes, cubed
  • 3 pkgs. frozen spinach (10 oz. size)
  • 2 c. diced ham
  • 1 tbsp. vinegar
  • 16 oz. sour cream
  • 1/2 c. milk
  • 1 tbsp. vinegar
  • salt and pepper to taste

Preparation

Step 1

Thaw spinach, drain and set aside. In 2 qt. microwave safe dish add potatoes and cover with water. Cook on high for 10 minutes. Remove,drian and set aside. In large saute pan add margarine and flour, cook on medium heat until flour begins to brown. Add sour cream, milk and vinegar. Continue to cook until mixture begins to thicken. Add potatoes, spinach, and ham continue to cook until potatoes are tender. Season with salt and pepper. Serve with bread.
