Ingredients
- 3 tablespoons olive oil
- 2 cloves MINCED garlic
- 1 * MED MINCED FINE onion
- 1/4 teaspoon salt
- 1/4 teaspoon FRESH CRACKED pepper
- 4 tablespoons CHOPPED FRESH basil
- 3 cups FRESH CHOPPED tomatoes
- 1/2 JUICE lemon
- 3 * 6-8 0Z FILLETS orange roughy
Preparation
Step 1
SAUTE OIL OVER HIGH HEAT. ADD ONIONS AND GARLIC.
SAUTE UNTIL SOFT. ADD REMAINING INGREDIENTS. SAUTE 5 MINUTES,
REMOVE FROM HEAT AND COOL. STORE IN CONTAINER AND REFRIGERATE.
GRILLING: BRUSH FISH WITH OIL AND LEMON. SPRINKLE SALT PEPPER, DRIED BASIL AND OREGANO OVER FISH.
PLACE FISH ON LIGHTLY OILED GRILL. GRILL OVER COALS 4 - 5 MINUTES PER SIDE UNTIL DONE.
REMOVE FISH. GARNISH WITH TOMATO BASIL SAUCE.
