Mandarin Pasta Spinach Salad with Teriyaki Dressing

Spinach pasta salad is light and refreshing with a sweet and spicy teriyaki dressing, with added nuts, oranges and cilantro. Perfect as a side salad or a light supper.

Ingredients
- DRESSING:
- 8 ounces bowtie pasta, cooked and cooled
- 4 cups spinach leaves, cleaned
- 1/2 cup craisins
- 1/3 cup cashews or pine nuts
- 1 (4-ounce) can mandarin oranges, drained
- 1/4 cup cilantro leaves, roughly chopped
- 1/3 cup teriyaki sauce
- 1/3 cup rice wine vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon sugar
- 1/2 cup olive oil
Preparation
Step 1
Prepare the dressing by mixing together all of the ingredients in a jar or container with a tight lid. Mix thoroughly and refrigerate until ready to serve.
Put the cooked and cooled pasta in a large bowl. Add the cleaned spinach, raisins, nuts, oranges and cilantro. Just before serving, add dressing, toss and serve.
