Meatball "Bombs"

These Meatball Bombs combine all the best flavors of bacon, cheese, and Italian sausage into one bite-sized morsel of BBQ-goodness. Serve these are your next party or holiday gathering with a side of your favorite ranch or BBQ sauce, and watch as your guests devour them all. These appetizers are perfect for you Super Bowl spread, well because, they are the bomb.

Ingredients
- 2 pounds spicy Italian sausage
- 1 pound ground beef
- 16 (1-inch) bite-sized cubes of cheese, Asadero or your favorite
- 3 eggs
- 1 1/2 cups Parmesan or 3 cheese Italian blend, divided
- 2 teaspoon McCormick BBQ seasoning
- 1 cup BBQ sauce
- 16 slices of bacon
Preparation
Step 1
In one bowl mix together Italian sausage, 2 eggs, and 1 cup Parmesan cheese.
In another bowl mix together ground beef, McCormick's seasoning, 1 egg, and 1/2 cup Parmesan cheese.
Scoop about 16 ground beef scoops, each smaller than your palm. Roll in your hands to make a ball. Then press center down and out, place cheese inside and gently work the meat up and over the cheese. Then roll in hands for a few seconds to tighten it up.
Scoop out 16 scoops of Italian sausage with a larger scoop. Roll into a ball, then press down and out from center to make a well.
Place smaller meatball stuffed with cheese inside. Gently push sausage up and over top of smaller meatball. Roll in your hands for a few seconds to tighten meat up.
Line baking sheet with parchment paper. Lay a slice of bacon on paper, place meatball in center. Then bring bacon up and twist and back down. Tuck under meatball and place little skewer in center. Brush with your favorite BBQ sauce.
Bake on center rack 325°F for 40 minutes. If the bacon isn't crispy enough, continue to bake until desired crispness.
