Ingredients
- 3 lbs. Pork, grilled or fried, chopped into chunks
- 20 CD-sized Corn Tortillas, fried
- 1/4 C. Fresh Cilantro, chopped
- 1/4 C. Onion, diced
- 1/2 C. Red Wine Vinegar
- 1/2 C. Olive Oil for frying
- Salt to taste
Preparation
Step 1
Mix vinegar & olive oil together for marinade. Chop pork into chunks about 1/2" square. Put into large ziploc bag with vinegar & olive oil and marinate overnight.
Chop onion & cilantro & set aside. Over medium heat, place pork in skillet with marinade. Cook stirring constantly, until done. About 10 minutes
Place pork on corn tortillas & add chopped toppings.
Serve immediately
