Cancun Pork Tacos

Ingredients

  • 3 lbs. Pork, grilled or fried, chopped into chunks
  • 20 CD-sized Corn Tortillas, fried
  • 1/4 C. Fresh Cilantro, chopped
  • 1/4 C. Onion, diced
  • 1/2 C. Red Wine Vinegar
  • 1/2 C. Olive Oil for frying
  • Salt to taste

Preparation

Step 1

Mix vinegar & olive oil together for marinade. Chop pork into chunks about 1/2" square. Put into large ziploc bag with vinegar & olive oil and marinate overnight.

Chop onion & cilantro & set aside. Over medium heat, place pork in skillet with marinade. Cook stirring constantly, until done. About 10 minutes

Place pork on corn tortillas & add chopped toppings.

Serve immediately
