  • 1/2 Cup Smart Balance Buttery Spread
  • 1 Cup Organic brown rice syrup
  • 2 Large eggs
  • 1 Tsp Vanilla
  • 1 1/2 Cups Old fashion Oatmeal
  • 3/4 Cup Whole Wheat pastry Flour
  • 1/2 Cup Raisins or dried Currents
  • 1 Cup Chopped Walnuts
  • 1/2 Cup unsweetened Coconut - optional
  • 1/4 Tsp Sea Salt
  • 1/2 Tsp baking powder
  • 1 Tsp Cinnamon

Preparation

Step 1

Preheat Oven to 350 degrees, and line two cookie sheets with parchment paper.

In medium bowl whip smart balance spread with Brown Rice syrup, eggs, vanilla,and beat well.

In another bowl mix together Oatmeal, flour,raisins,walnuts,coconut,salt,bakingpowder,& cinnamon.

With a wooden spoon stir the oatmeal mix into the smart balance combination until all is moistened.
Using two spoons or a small scope place on cookie sheet.
Bake 12 to 15 minutes, and cool 20 minutes before taking off the paper.
