Chicken & Veggie Tostada

Ingredients

  • 1 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp canola oil
  • 12 oz chicken breast tenders
  • 1 cup corn kernels
  • 1 cup chopped zucchini
  • 1/2 cup salsa verde
  • 3 Tbs chopped cilantro
  • flour tortillas
  • cooking spray
  • 1 cup shredded monterey jack cheese

Preparation

Step 1

Preheat broiler. Comine first 3 ingredients, stirring well. Heat oil in skillet over med-high. Sprinkle spice mixture over chicken. Saute for 3 min, add corn & zucchini. Saute until chicken is done. Break up the chicken a bit. Stir in salsa & 2 tsp cilantro. Stir & cook until liquid is gone. Spray tortillas with cooking spray & arrange in a single layer on cookie sheet. Broil 3 minutes or until browned. Spoon mixture onto tortillas & sprinkle with cheese. Broil until cheese melts. Sprinke with remaining cilantro.
