Caesar Salad*****

Making Caesar Salad is more of a process than recipe. Taste as you go, lemon, anchovy and garlic are all strong flavors, so adjust accordingly.

Ingredients
- Dressing:
- Romain Lettuce(wash- dry- chop)
- Croutons & Parmesan Cheese
- 4 garlic cloves
- 1 can anchovies-I only use 2-3 filets
- Vegetable Oil
- 1 tsp mustard
- 1 tsp Worcestershire sauce
- 1 T cider vinegar
- 1 Lemon- juiced
- 2-3 egg yolks
Preparation
Step 1
-Smash garlic & anchovies together.
-Add mustard, Worcestershire, vinegar, juice and yolks.
- Whip with fork of whisk, make sure you mix well.
-Stream in oil as needed to reach right consistency, continue to mix while adding oil.
-Season with S&P to taste.
-Dress salad and add croutons and Parmesan .
