  • 2 eggs
  • 1 cup whole milk
  • 2 tablespoons unsalted butter, divided and melted
  • 1 tablespoon minced fresh parsley
  • 2 teaspoons minced lemon zest
  • 1 teaspoon kosher salt
  • Pinch of cayenne pepper
  • 1 cup all-purpose flour

Step 1

Whisk together eggs, milk, 1 tablespoon butter, parsley, zest, salt, and cayenne in a bowl. Whisk in flour just until combined. Cover batter and chill at least 30 minutes.

Preheat oven to 450°. Place a popover pan on a baking sheet and heat in oven, 10 minutes. Remove pan from oven and coat cups with 1 tablespoons butter. Fill each cup halfway with batter and bake 15 minutes. Reduce heat to 375° and bake popovers 20 minutes more. Serve popovers immediately.
