Creamy Chicken Penne

Ingredients

  • 2 cups penne pasta, uncooked
  • 3/4 lb boneless skinless breasts, thinly sliced
  • 1/2 cup chopped onions
  • 1 tbsp olive oil
  • 1 pkg (6 oz) snow peas
  • 1 small red pepper, chopped
  • 2 tsp minced garlic
  • 2 tbsp butter
  • 1 tbsp flour
  • 1- 1/2 cup milk
  • 4 oz cream cheese, cubed
  • 1/2 cup grated romano cheese
  • 1 tbsp finely chopped fresh parsley

Preparation

Step 1

1. Cook pasta. Meanwhile, cook chicken and onions in hot oil in large skillet for 6-8 mins or until chix is done, stirring frequently. Add snow peas, red pepper, and garlic; cook stir 1 min. Remove from heat; cover to keep warm.

2. Melt butter in med saucepan. Stir in flour until well blended. Gradually stir in milk. Bring to boil; cook on medium heat 2 min or until thickened, stirring constantly. Add cream cheese, grated cheese, s&p; cook 1-2 min or until cream cheese is completely melted and suace is well blended, stirring constantly.

3. Drain pasta; place in large bowl. add chix mixture and suace; toss to coat. TOp with parsley
