- 1/2 cup olive oil
- 4 T red wine vinegar
- 1 T Dijon mustard
- 1/4 t agave nectar or honey
- 1 t kosher salt
- 1/4 t black pepper
- 1 T minced shallot

Combine all ingredients except olive oil in Vitamix blender, blend on speed 8 for 10 seconds until smooth. Reduce speed to 6, open lid plug, and slowly drizzle in olive oil.
