Ingredients

  • 1 c sifted flour
  • 1/2 c quick cooking rolled oats
  • 1/2 c brown sugar, firmly packed
  • 1/2 c buter or margarine
  • 1 (1 lb) can of pumpkin
  • 1 13+ oz can of evaporated milk
  • 2 eggs
  • 3/4 c sugar
  • 1/2 t cinnamon
  • 1/2 t ground ginger
  • 1/4 t ground cloves
  • 1/2 c chopped pecans
  • 1/2 c brown sugar firmly packed
  • 2 T butter or margarine

Preparation

Step 1

1. Mix first 4 ingredients in mixing bowl. Mix until crumbly, using electric mixer on low speed. Press into ungreased 13x9x2" pan. Bake in 350 oven for 15 min.
2. Combine ingredients from pumpkin to cloves in mixing bowl and beat well. Pour over crust and return to oven for 20 min.
3. Combine pecans, brown sugar, and margarine and sprinkle over pie filling. Return to oven and bake another 15-20 min or until filling is set. Cool in pan on rack and then refrigerate. Serve with whipped topping. I like to sprinkle some cinnamon on my topping.
