Ingredients

  • 1 shortbread or graham cracker crust
  • 1-8 oz Cool Whip whipped topping
  • 2/3 c pureed Kumquats
  • 1 can sweetened condensed milk
  • 1/2 c lemon juice

Preparation

Step 1

Beat condensed milk and whipped topping. Add the lemon juice and beat until thickened. Add pureed kumquats, pour into shell and chill in refrigerator for several hours.

To make puree:
Wash the kumquats, cut in half and remove seeds. Place in a blender and puree. Do not cook. You can freeze the puree in Ziploc bags. Defrost the puree before using and drain the excess liquid. You can freeze the puree for six months.
