Johnny Cake - Bahamian Style

Johnny Cakes are a Bahamian staple food. It's usually served with stew fish, boiled fish, souse conch, souse chicken, souse sheep tongue....you get the picture. All of these are most often served for breakfast, but are delicious anytime.

Ingredients

  • 4 cups all-purpose flour
  • 4 teapoons baking powder
  • 1/2 cup sugar
  • 3 1/2 tablespoons oil (like peanut or canola)
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 3 tablespoons butter or margarine, melted

Preparation

Step 1

Mix dry ingredients together well.

Add wet ingredients and mix. Batter will be thick.

Turn onto floured surface and knead several times or beat batter in bowl several times with a wooden spoon.

Turn into a greased 8" round or square pan (can use an iron skillet). Dip fingers into flour and pat down dough. Prick top with a fork and brush with half of melted butter. Bake @450F for 25 minutes or until light golden brown. Brush with remaining melted butter.

Cool slightly and serve warm or at room temp.
