Ingredients
- 1/2 cup stone ground mustard
- 1/4 cup honey
- 1 Tbsp white wine vinegar
- 1 Tbsp minced garlic
- 1/4 tsp red pepper flakes
- 4 boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 1 tsp white wine vinegar
- 2 cups peeled and sliced peaches
- 2 cups sliced cucumbers
- 1/2 cup sliced shallots
- 1/4 cup fresh basil
Preparation
Step 1
Preheat grill to medium high. Brush grate with oil. Combine first five ingredients, season with salt and reserve 1/3 cup for dressing. Season chicken breasts with salt and pepper, brush with mustard mixture. Grill chicken, covered, 6 minutes per side. Whisk remaining olive oil and vinegar into reserved mustard mixture. Combine remaining ingredients on a platter, top with basil and chicken, drizzle with dressing.
