
Ingredients
- 2 med carrots peeled
- 1 med red bell pepper
- 5-6 green onions divided
- 2 pork tenderloins
- 2 Tbsp toasted sesame oil
- 2 Tbsp Asian seasoning mix
- 4 packages oriental flavor instant noodles
- 1 Tbsp veg oil
- 4 C water

Step 1
1. Cut carrots into strips using peeler. Cut bell pepper lengthwise into strips. Slice green onions and set aside for garnish
2. Trim fat and silver skin from pork. Slice pork lengthwise into four strips. Then thinly slice crosswise. Combine pork, sesame oil, seasoning mix and two of instant noodle seasoning packets into a bowl and mix.
3. Add veg oil to skillet; heat over med high heat for 1-3 min or until simmering. Add half of pork. Cook and stir 2-3 min or until browned. Remove from skittel and do same with remaining pork.
4. Add carrots and bell peppers to skillet. Cook 1-2 min or until crisp-tender. Add water and remaining seasoning packets; stir to loosen brown bits from bottom of skillet. Add noodles and white parts of green onions. Cover and bring to boil and cook 4-5 min till noodles are softened. Add pork; remove skillet from heat and let stand. Garnish with reserv3ed green onion tops.
