Ingredients
- 1/2 cup butter
- 12 oz. 60% cocoa chocolate (chips or bars broken up)
- 2 large eggs
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1 Tbs. vanilla
- 3/4 cup flour
- 3 Tbs. cocoa powder
- 3/4 tsp. baking powder
- pinch of salt
Preparation
Step 1
In a small pot, melt your butter over medium-low heat. Add in your chocolate. Don't leave it on the heat too long. It will begin to melt. Use a spoon or whisk until smooth, taking it on and off the heat so you don't burn it.
Remove from the heat and set aside.
In mixing bowl, combine eggs, sugar, brown sugar and vanilla. Mix until combined and then mix another solid 4-5 minutes. Allow the batter base to thicken. Add in the butter and chocolate mixture and mix just until incorporated.
Allow batter to chill for 20 minutes.
When ready to bake, preheat oven to 350* and line a baking sheet with parchment paper. Using a small scoop, drop equal amounts of dough 1-1/2 inches apart.
Bake 8-10 minutes or until cookies are cracked on top.
Allow to sit for 2 minutes then move to a cooling rack.
