Halloumi Salad

Ingredients
- 4 cups mixed baby greens
- 1 cup red seedless grapes
- 6 ounces halloumi cheese (or use mozzarella), thinly sliced
- Balsamic Vinaigrette dressing

Preparation
Step 1
Place greens in serving bowl. Add grapes and toss to combine.
In a large nonstick pan, grill cheese until it begins to lightly brown. Flip and brown other side of cheese.
Arrange pan fried cheese on top of salad greens and grapes.
Pour on dressing and serve.
Leanne’s note: Halloumi cheese (pronounced hah-LOO-me) is a salty, crumbly cheese from Cyprus that stands up well to heat and can even be fried or grilled. Look for it in Middle Eastern markets. You can also substitute feta (similar flavor) OR mozzarella (similar texture) for it.
