Ingredients

  • 1 lb shrimp
  • 8 oz whole wheat pasta (1/2 box)
  • 1 onion, sliced into thin strips
  • 3 cloves garlic, minced
  • 28 oz can crushed or diced tomatoes
  • 1 C low sodium chicken broth
  • 1 tbsp flour
  • 2 tbsp half and half
  • 4 tsp cajun seasoning
  • 1/2 C sliced scallions

Preparation

Step 1

1. Bring a large pot of water to a boil. Cook pasta according to package directions.

2. Cook onion and garlic until fragrant.

3. Add shrimp and cajun seasoning. Cook, stirring frequently, until the onion is soft.

4. Add flour to coat.

5. Add tomatoes with their juice and bring to a boil. Cook, stirring often, until the sauce is bubbling and thickened.

6. Remove from heat and stir in half anf half.

7. Add sauce to the pasta and stir to coat completely.

8. Top with scallions.
