Queso Fundido - Melted Cheese and Chorizo Dip 0 Picture

Ingredients

  • 2 fresh (uncooked) chorizo sausages (Mexican-style)
  • 1 =2 tablespoons olive oil
  • 1 onion
  • 1/2 cup tomato salsa
  • 1 teaspoon cumin
  • 1/3 cup cream cheese
  • 1 cup grated monteray jack cheese (or other melting cheese)
  • 1/2 cup grated mozzarella cheese
  • 2-3 green onions, chopped

Preparation

Step 1

1.Remove the casings from the chorizo sausages. Place 1 tablespoon of olive oil in a heavy skillet and heat on medium. Add the sausage and cook, crumbling it and breaking it into pieces with a spatula, until it is well browned. Remove sausage from skillet and set aside.


2.Peel and dice the onion. Add another tablespoon of oil to the same skillet. Cook the onion in the skillet over medium heat, stirring, until soft and fragrant. Add the cumin and cook for one minute more. Add the salsa, lower the heat, and cook for 2-3 minutes more.


3.Remove skillet from heat and stir in the cream cheese until melted and well mixed. Place the onion mixture in a small oven proof casserole. Place the grated cheese on top of the onions, then sprinkle the cooked chorizo on top of the cheese.


4.Place casserole under the broiler until cheese is melted. Serve queso fundido warm, with tortillas, corn chips, or bread for dipping.
