Broccoli Cheddar Cornbread

I've seen several recipes for this cornbread with cottage cheese. This one is a little different -I use cheddar. My entire family loves it. Great with chili. In fact I'm getting hungry just adding this recipe. Enjoy! :)

Ingredients
- 1 (10 ounce) pkg frozen chopped broccoli (thawed)
- 1 package Jiffy cornbread mix
- 3 eggs, beaten
- 1 medium onion, chopped
- 1 cup cheddar cheese, shredded
- 1 stick butter, melted
- 1/2 teaspoon salt
- 1 or 2 garlic cloves, crushed
- 1/4 teaspoon ground red pepper
Preparation
Step 1
Press thawed broccoli between paper towels to remove excess moisture.
Combine cornbread mix, eggs, chopped onion, cheese, butter and seasonings. Stir well. Stir in broccoli (batter will be thick).
Pour mixture into a greased 8" square pan.
Bake at 375 degrees for 25-30 minutes, or until golden brown. Cool slightly, cut into squares.
