Tomato Tortellini Soup

An easy and delicious recipe for tomato tortellini soup that kids will love. Onions and garlic, sun-dried tomatoes, half-and-half and chicken broth make the soup: just add tortellini.

Ingredients
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 (10 ounce) cans condensed tomato soup
- 1/4 cup sun-dried tomatoes, chopped
- 2 cups half-and-half
- 2 cups chicken broth
- 1 teaspoon onion powder
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 (9 ounce) package cheese-filled tortellini
- 1/2 cup Shredded Parmesan Cheese, for garnish
Preparation
Step 1
Sauté garlic and olive oil in a large pot over medium heat until garlic is golden brown.
When the garlic is done, add condensed tomato soup, sun dried tomatoes, half-and-half, chicken broth and spices. Bring to a simmer.
Once simmering, drop tortellini into the soup. Cook according to the package directions.
After tortellini is fully cooked, reduce heat. Serve into bowls and top with Parmesan Cheese.
