Ingredients
- 3/4 c. dry lentils, cleaned
- 2 c. chicken broth
- 1 16oz can crushed tomatoes
- 1 med gr. pepper, chopped
- 2 cloves garlic, crushed
- 1 tbs chili powder
- 1/2 tsp cumin
- 1/4 tsp allspice
- 1 16 oz can tomato sauce
- 2 c. whole kernel corn
Preparation
Step 1
Combine all ingredients except tomato sauce and corn in 2½ quart pot and bring to a boil over high heat. Reduce to low, cover, and simmer for 25- 30 minutes. Stir in tomato sauce and corn. Simmer for 10- 15 minutes. Serve hot over rice. Garnish with sour cream.
