Jamaican Jerk Chicken

Ingredients
- Jerk Paste
- 2 tbsp. Jamaican Jerk Seasoning, such as McCormick Gourmet Collection
- 1 tbsp. lemon juice
- 1 tbsp. brown sugar
- 1 tbsp. olive oil
- Ground (Cayenne) red pepper

Preparation
Step 1
Mix the seasoning, lemon juice, brown sugar, and olive oil. Rub or brush the jerk paste on 2 lbs. of pork or chicken. Sprinkle with red pepper as desired. Place covered dish in refrigerator and allow to sit for 1 to 24 hours.
Prepare a broiler pan by covering the broiler with aluminum foil. Remove chicken from the refrigerator and place on the broiler pan, with the skin side down. Set the broiler pan on a rack positioned 5+ inches from the broil element. Broil on Hi for about 10 minutes or until golden brown. Reduce heat to a Lo broil for 5 minutes. Turn the chicken over and reset the oven to Hi broil. Cook for 5 minutes and then reduce heat to a Lo broil for 5 minutes. Total cook time is 25 minutes. Remove the chicken from the oven and serve.
