POTATO MUFFINS

Ingredients

  • 1 6-oz. pkg. potato pancake mix
  • 2 eggs
  • 2 cups water
  • 1/2 cup oil (use 1/4 cup less or more, as needed)
  • 1/4 cup matzo meal

Preparation

Step 1

Beat eggs, add water, oil and mix. Add pancake mix and matzo meal. Let stand for at least 5 minutes. Spray muffin tin and fill. Bake at 350 degrees for 1 hour until crispy brown.

These can be frozen and reheated till hot.
