Arroz con Gandules

Ingredients

  • 2 1/2 cups long grain white rice
  • 4 cups water
  • 3 tablespoons olive oil
  • 1/2 cup Sofrito
  • 16 oz. can green pigeon peas, drained
  • 8 oz. tomato sauce
  • 1 envelope Sazon with achiote
  • 1 teaspoon ground oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon pepper
  • 1 tablespoon salt

Preparation

Step 1

1. In a large pot, heat the oil on medium heat and add the Sofrito. Stir fry for 1 minute.

2. Add the water, peas, tomato sauce, Sazon, oregano, cumin, salt, and pepper. Bring to a boil.

3. Stir in rice and bring to a boil again. Then lower heat to low-medium and stir and cover.

4. Let cook for 30 minutes, stirring every 10 minutes until the rice is tender.
