Hash browns, eggs, bacon, onion, and cheese combine to create a quick and easy breakfast casserole. Just cook the bacon, combine the ingredients, and bake.

Ingredients

  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese (8 ounces)
  • 1 1/2 cups 4% cottage cheese (12 ounces)
  • 1 1/4 cups shredded Swiss cheese

Preparation

Step 1

In a large skillet, cook bacon and onion until bacon is crisp; drain. In a large bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-inch x 9-inch baking dish.

Bake, uncovered, at 350°F for 35 to 40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
