KIELBASA & RED CABBAGE - Instant Pot Directions

Ingredients
- 2 med.-sized red cooking apples ( 4 if making own apple juice)
- 1 small onion, diced
- 1/2 cup apple juice
- 3 tblsp. Red wine vinegar
- 1 - 1 lb. Kielbasa, cut into 2 in. thick slices (1/2" thick for Instant Pot)
- 2 tblsp. Butter
- 1 small head red cabbage (1 1/2 lbs.) thinly sliced
- 1 tblsp. Sugar (2 tblsp. powdered lakanto)
- 1.5 tsp. salt

Step 1
Dice 1 apple. In 10 in. skillet over med. heat in hot butter, cook onion until tender, stirring occasionally. Add cabbage, apple juice, sugar, vinegar, salt & diced apple; heat to boiling. Reduce heat to low; cover & simmer 15 min. Add Kielbasa to cabbage mixture; over high heat, heat to boiling. Reduce heat to low; cover & simmer 15 min. Cut remaining apple into wedges; add to mixture; heat through.
Instant Pot Directions:
Toss together 1 apple (diced), onion, cabbage, apple juice, lakanto, vinegar & salt. Place in Pot and cook on High Pressure for 5 minutes. Release Pressure, immediately add Kielbasa that has been cut into 1/2" slices (and brought to room temperature if possible), butter and 1 apple (sliced thin). Replace lid and let set 5 min. to warm up Kielbasa and apple. Serve.
