Ingredients
- 2 Tbls. Olive Oil
- 1 Tbls. Red Wine Vinegar
- 1 Tbls. Red Onion, minced
- 3/4 tsp. Oregano
- 2 Medium Cucumbers,
- peeled, seeded and diced
- 1-15 OZ Can Cannellini Beans
- rinse and drain
- 1 Red Bell Pepper,
- finely diced
- Salt and Pepper
Preparation
Step 1
Whisk together oil, vinegar, onion,
and oregano in a large mixing bowl.
Add cucumbers, beans, and red pepper;
toss to combine.
Season with salt and ground pepper
serve.
