  • 1/3 cup maple syrup
  • 2 tbs. Dijon mustard
  • 1/2 tsp. nutmeg
  • 1/2 tsp. dried thyme, crushed
  • 1/4 tsp. basil, crushed
  • 1/4 tsp. ground red pepper
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. black pepper
  • 1/8 tsp. ground allspice
  • one 12 to 16 oz. pork tenderloin
  • 3 bay leaves
  • pam spray

Preparation

Step 1

Combine maple syrup and mustard in a small bowl; stir with a whisk until blended. Set maple mustard sauce aide.

Combine nutmeg and next 7 ingredients in a bowl; stir well. Rub mixture over tenderloin. Place tenderloin with cooking pray. Bake at 425 degrees for 25 to 35 minutes or until a meat themoeter inserted in thickest part of tenderloin registers 160 degrees. Discard bay leaves. Place tenderloin on a platter, slice diagonally across the grain. Serve with reserved. maple mustard sauce. Yields 3 to 4 servings.
