Ingredients
- Ras al Hanout:
- 1 Eggplant, diced
- 1 Red peppers, diced
- 2 Tomatoes, chopped
- 1 Onion, diced
- Handful dried apricots, chopped (or dates)
- Handful golden raisins
- 2-3 garlic cloves, minced
- 2 zucchini, sliced into thick rounds
- Parsley, chopped
- Mint, chopped
- Basil, chopped
- Olive oil
- S/P to taste
- Honey, to taste
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander seeds
- 1/2 teaspoon cayenne
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- Preparation for Ras el Hanout:
- In a small bowl whisk together all ingredients until combined well. Spice blend keeps in an airtight container at cool room temperature 1 month.

Step 1
Sautee onion in olive oil, then add in the rest except zucchini, cover and let cook down for 20 minutes or longer… then add in zucchini and cook another 20 minutes...
