Ingredients
- CRUST
- 6 oz. cream cheese (softened)
- 2 cups flour
- 2 sticks butter
- FILLING
- 1-1/2 cup dark brown sugar
- 2 teaspoon vanilla extract
- 2 tablespoon melted butter
- 1-1/2 cup finely chopped pecans
- 2 eggs
Preparation
Step 1
Crust:
Mix cream cheese and butter, until smooth.
Add flour, mix well.
Divide dough into quarters; divide each quarter into small balls. Press each ball onto bottom and sides of miniature muffin pans.
Filling:
Combine sugar, vanilla extract, butter and egg.
Stir in pecans.
Mix well and put 1 teaspoon OR more of pecan filling into each shell, filling each cup.
Bake @ 350 for 15-20 minutes until pastry is golden brown.
Cool 5 minutes, remove from pans.
Note: You can freeze them if you want to serve them at a later date.
