Candy-Coated Nuts

Praline coated nuts are the perfect addition to your holiday goodies assortment. I don't remember where I got this recipe but it is at least 25 years old!
Ingredients
- 3 cups walnuts or pecans (halves and large pieces)
- 1/2 cup dark brown sugar, firmly packed
- 1/2 cup light brown sugar, firmly packed
- 1/2 cup granulated sugar
- 1/2 cup sour cream
- Dash salt
- 1/4 teaspoon vanilla extract, optional
Preparation
Step 1
Place the nuts in a mixing bowl. Lightly butter a large baking sheet. Set both aside.
Butter the sides of a heavy 1-qt. non-stick saucepan. Add the brown sugars, granulated sugar, sour cream, and salt. Cook mixture on medium-high heat until it reaches soft ball stage (236 degrees F. on candy thermometer), stirring constantly. This takes about 10 minutes, reduce heat if necessary. Remove from heat and stir in vanilla, if using.
Using a spoon, beat the mixture until it begins to thicken, 3-4 minutes.
Pour the mixture over the nuts, stirring quickly to coat evenly.
Immediately, turn the mixture out onto the prepared baking sheet and use two forks (or fingers) to separate the nuts. Cool completely.
NOTE:
Doubling the recipe is not recommended since it hardens so quickly.
