Ingredients

  • 1 1/4 pounds 90% lean ground beef
  • 2 tablespoons canola oil, divided
  • 1 small yellow onion
  • 1/2 green bell pepper
  • 1 jalapeno pepper
  • 2 cloves garlic
  • 1 15 ounce can petite diced tomatoes with green chilies
  • 1 15 ounce can tomato sauce
  • 1/4 cup chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Step 1

Finely dice the onion, bell pepper, jalapeno pepper (seeds removed) and garlic. Heat 1 tablespoon oil in a saute pan. Starting with the onion saute 2-3 minutes over medium-low heat. Next, bell pepper and jalapeno about 1-2 minutes and then the garlic for 1 minute. Remove sauteed vegetables to a plate and add the remaining oil. Brown the hamburger. Season with salt and pepper. Add the veggies and the can of tomatoes with green chilies. Strain through a fine mesh sieve to remove the excess oil and liquid and add to crock pot. Next, add the tomato sauce and spices. Stir and set to low 4 hours. Serve with garnish of low fat sour cream & cilantro.
