Ingredients
- 5 good size tomatoes
- 1 cup heavy cream
- 12 basil leaves
- 1 stick of butter
- 32 oz. tomato juice
Preparation
Step 1
Boil tomatoes just until skin is peeling away from tomato.
Cool and peel the tomatoes.
Return tomatoes to pot with all tomato juice and simmer for about 20-25 minutes.
Put simmered mixture into a blender and puree in sections with basil leaves.
Return the puree mixture into the pot and while reheating add the butter and then the cream.
Simmer for another 20 minutes and add salt & pepper to taste.
