Corn and Butterbean Salad

Great for Easter lunch or weeknight dinner! Best if left to rest several hours before serving.

Ingredients
- 1 can baby lima beans
- 1 can shoepeg white corn
- (drain and rinse well with cold water)
- 3 or 4 green onions and tops, sliced thin
- 1/4 cup bell pepper, chopped fine
- 1/4 cup celery, chopped fine
- small jar chopped pimernto, drained
- dash red pepper
- salt and pepper to taste
- 4 Tablespoons mayonaise
- juice of 1/2 lemon
- 2 tsp. Durkees Dressing
Preparation
Step 1
Mix all ingredients together. Marinate at least 2 hours.
serve cold--serves 8
