Ingredients
- Use the size filet mignon tenderloin you want. You can gauge the size by estimating two one and one half inch slices per person. If you buy a large tenderloin you can make some steaks or a second roast or tips to freeze and use later.
Preparation

Make some light slits around the roast. Rub olive oil, and garlic salt on the beef. Wrap in plastic and let sit in fridge for an hour or two or overnight. Warm oven to 500 degrees. Remove plastic and salt and pepper the beef. Place in baking pan or dish and bake for 15 minutes then lower heat to 450 and bake for 15 to 20 minutes longer. 140-150 degrees internal temp by thermometer is medium rare.
