Classic Basil Pesto

- 4 cups fresh basil leaves
- 1/2 cup olive oil
- 1/3 cup pine nuts
- 2 garlic cloves
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon coarse kosher salt

Step 1
1. Add the basil, olive oil, pine nuts and garlic cloves to a blender or food processor and puree until a paste forms. You may have to scrape down the ingredients to ensure a good mix.
2. Add the cheese and salt and continue pureeing until smooth.
3. Chill Slightly before serving.
For a twist on this classic composition, try replacing the pine nuts with macadamia nuts or walnuts. Or, experiment by adding a variety of herbs such as parsley or tarragon.
