Baked Garden Vegetables

Ingredients

  • 1 c. carrots, cut into mitchsticks
  • 2 c. potatoes, peeled, quartered and cut into 1/4" slices
  • 2 lg zucchini, quartered and cut in 1" cubes
  • 2 c. shredded cabbage
  • 1/4 c. butter
  • 3 tbs fresh parsley, minced

  • salt & pepper

Preparation

Step 1

Preheat oven to 325 degrees. Place all vegetables in casserole dish with lid. Dot with butter. Sprinkle with parsley, spike, salt and pepper. Cover and bake for 35-40 minutes or until vegetables are to your liking.
