Greek Salad with Cherry Tomatoes

Ingredients
- 2 red bell peppers
- 1 green bell pepper
- 2 cups cherry tomatoes
- 2 cucumbers,
- 1 red onion, sliced
- 8 ounces feta cheese, crumbled
- 1 clove garlic, minced
- 3/4 cup kalamata olives
- 6 anchovy fillets cut in thirds
- 2 tablespoons capers
- 1/4 cup red wine vinegar
- 2 tablespoons minced fresh dill
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper
- 1/3-cup fruity extra-virgin olive oil

Step 1
Seed the bell peppers and cut into 1-inch chunks. Halve about half of the cherry tomatoes. Peel and thickly slice the cucumbers. Thinly slice the red onion. Crumble the feta. Mince the garlic clove.
In a large bowl, combine bell peppers, tomatoes, cucumbers, onions, feta cheese, olives, anchovies and capers. Toss together.
In a small bowl whisk together the vinegar, garlic, dill, oregano,
½ teaspoon salt and ½ teaspoon ground pepper. While whisking, slowly drizzle in the olive oil to make a thick dressing. Pour over salad, toss and serve.
