Ingredients

  • 1 large smoked ham (about 15-20 lbs)
  • 1 box dark brown sugar
  • 1 16 oz sweet orange marmalaide
  • 1/2 cups burbon
  • 1/2 to 3/4 tsp cilantro
  • 1 tsp dry mustard
  • cloves

Preparation

Step 1

Mix all ingredients (except cloves) in a large bowl
scrore ham with a sharp knife in both directions
put cloves in ham 1 to 2 inches apart
bake ham one hour at about 300 degrees (do not baste)
after the first hour turn up the oven to 350-375 degrees and baste ham thoroughly. Then baste with the mixture prepared at about 20-30 minute intervals for the remaining amount of cooking time.

Note; ham should be cooked uncovered in large roasting pan. Total cooking time is about 10-15 minutes per pound. Once you are out of baste - you can use the drippins in the bottom of the roasting pan to baste. Be sure to baste once after removing from over. Use meat thermometer t check ham for doneness. Let cool before slicing
