Ingredients

  • 1 3/4 cups unbleached, all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cut int 16 pieces
  • 1 1/2 granulated sugar
  • 3 large eggs
  • 2/3 cup evaporated milk (not reconstituted) or whole milk
  • 1 tablespoon vanilla extract

Step 1

Preheat oven to 350 degrees
lightly butter or spray 2 8-9" round cake pans. Cut rounds of parchment to fit the bottoms of the pans and place in pans; butter or spray again.
Place flour, baking powder, and salt in a medium bowl. Using low speed mix for 15 seconds. Place butter and sugar in a large mixing bow and mix on low speed for 40 seconds, then fream on medium for 2 1/2 minutes, until light and fluffy. Add eggs one at a time, mixing on low speed for 20 seconds after adding each egg. Add flour mixture, milk, and vanilla on low speen, mix until blended and smooth, about 1 minute.

Divide batter evenly amont prepared pans. Bake in preheated oven until a cake tester comes out clean when inserted in the center of the pan. 30-32 minutes for 8" layers; 25-28 minutes for 9" layers.

Cool in pay for 10 minutes; loosen sides of the vake from pands with a thin knife, then remove from pans and place on a wire rack; remove parhment. cool completely before frosting.
